Chickpea & Potato Patties with Yogurt Sauce

👨‍🍳 Instructions

  1. Mash the cooked chickpeas in a large bowl.
  2. Mash the cooked potatoes and add them to the bowl with chickpeas.
  3. Peel and grate the onion, garlic, and a small piece of ginger.
  4. Heat 1 tbsp olive oil in a pan over medium heat.
  5. Add the grated garlic, ginger, and onion. Cook until golden.
  6. Add the fried mixture to the bowl with chickpeas and potatoes.
  7. Season with black pepper, 1/2 tsp salt, and 1/3 tsp cumin.
  8. Chop parsley and add it to the mixture.
  9. Mix everything well until combined.
  10. Shape the mixture into patties by hand.
  11. Heat some olive oil in a pan and cook the patties for 2–3 minutes on each side until golden.

🧄 Yogurt Sauce Instructions

  1. In a small bowl, combine vegan yogurt, olive oil, lemon juice, black pepper, salt, and grated garlic.
  2. Mix well until smooth.
  3. Serve alongside the patties.

Serve warm with fresh salad or inside pita bread with the yogurt sauce.
