High Protein Pancakes
- 1 banana
- A handful of walnuts
- 3 eggs
- A handful of blueberries or raspberries
- Add all ingredients to a blender.
- Blend briefly until just combined. Keep it slightly chunky.
- Cook the mixture on a hot, lightly oiled pan like regular pancakes.
- Serve warm with your favorite toppings such as yogurt, honey, or extra berries.
If you want a thinner batter, add a splash of milk or water. To make it dairy free, use water or plant milk. For extra protein, add a scoop of unflavoured protein powder.
