Red Lentil Patties

Instructions

  1. Add lentils to a bowl and cover with water. Let soak for 2 hours.
  2. Drain the lentils.
  3. Roughly chop the shallot and garlic. Grate the carrot and chop the parsley.
  4. Add the lentils, shallot, garlic, carrot, parsley, tomato puree, salt, and black pepper to a blender.
  5. Blend until the mixture is combined but not too smooth (should hold shape).
  6. Heat olive oil in a pan over medium heat.
  7. Form the mixture into small patties or circles by hand.
  8. Place on the pan and cook until golden on both sides.

Serving Suggestion

Serve warm with a yogurt dip or inside a pita with salad.
