Red Lentil Patties
🥣 Ingredients
- 1 1/2 cups (285g) dried red lentils
- 1 large shallot
- 2 garlic cloves
- 1 small carrot
- 15g (1/4 cup) chopped fresh parsley
- 1 tbsp tomato puree
- 1 tsp salt
- 1/2 tsp black pepper
- Olive oil (for frying)
Instructions
- Add lentils to a bowl and cover with water. Let soak for 2 hours.
- Drain the lentils.
- Roughly chop the shallot and garlic. Grate the carrot and chop the parsley.
- Add the lentils, shallot, garlic, carrot, parsley, tomato puree, salt, and black pepper to a blender.
- Blend until the mixture is combined but not too smooth (should hold shape).
- Heat olive oil in a pan over medium heat.
- Form the mixture into small patties or circles by hand.
- Place on the pan and cook until golden on both sides.
Serving Suggestion
Serve warm with a yogurt dip or inside a pita with salad.
